Lunch, make way for the revitalized four-quadrant wrap!
Lunch, for me, is the hardest meal to prepare for. I am always running from one place to the next and often don't have time for a gourmet lunch hour. With a few staple ingredients, however, I have learned to mould any genre of meal into a wrap. It's the perfect foundation for leftovers and will create an entirely new meal in just a few minutes.
You might have heard about the TikTok Tortilla Wrap trend that has gone viral. It's an ingenious way to turn minimal ingredients into maximum pleasure. As long as you have burrito-sized tortillas in stock, you are ready to wrap and roll. Since I stay away from gluten, I prefer these grain-free tortillas.
1. With your tortilla flat on a cutting board, make one cut from the middle of the tortilla down to the edge.
2. In your head, divide the tortilla into four equal quadrants. Then, add a different ingredient or two to each quadrant.
3. Starting from the bottom left quadrant, fold the tortilla up to the top left, then over to the top right, then down to the bottom right.
4. Grill your now-wrapped masterpiece in a panini press or pan.
The possibilities are LITERALLY endless, but here are a few ideas to get your wheels turning:
Quadrant 1: Mashed avocado
Quadrant 2: Fried egg
Quadrant 3: Sliced tomatoes
Quadrant 4: A handful of raw or sautéed spinach
Quadrant 1: Sautéed peppers and onions
Quadrant 2: Black beans and ground turkey
Quadrant 3: Sliced tomatoes and lettuce
Quadrant 4: A handful of shredded cheese and/or a scoop of Greek yogurt
Quadrant 1: Thinly sliced chicken breast
Quadrant 2: Crumbled feta or goat cheese
Quadrant 3: Arugula and sliced tomatoes
Quadrant 4: Hummus, tzatziki, and/or tahini
Quadrant 1: Mashed avocado
Quadrant 2: A handful of raw or sautéed spinach
Quadrant 3: Sautéed onions and garlic
Quadrant 4: A slice of cheese and a scoop of lentils
