Ingredients

  • 1 1/2 cup Liquid Egg White
  • 1 1/2 cup Lactose Free Cottage Cheese
  • 1 Bell Pepper, diced
  • 1 cup Spinach or Kale
  • 1/2 tsp salt
  • 1/2 tsp black pepper

(any additional favorite spices can be used)

Note: You can customize these Veggie Egg White Bites by adding bacon, dairy-free cheese, or other ingredients; just ensure the egg whites and lactose-free cottage cheese remain in equal parts. Feel free to include notes about substitutes to suit your taste.

Preparation

  1. Preheat the oven to 325 degrees F
  2. Spray a 12-cup muffin pan with your favorite nonstick spray, I use evoo spray
  3. In a blender, blend the LF cottage cheese, liquid egg whites, salt, & black pepper together
  4. Add diced bell pepper & spinach to non stick pan & cook down until soft but not soggy
  5. Add veggies to each cup & top with egg white mixture
  6. Bake in the oven for 25-30 minutes until the edges are golden and cooked fully through
  7. Let cool slightly and enjoy!
